UNION PRIME, New York's newest marriage of contemporary American steak and modern sushi makes its grand debut in late January 2009. Situated on East 16th Street, just off Union Square, UNION PRIME presents a menu of modernized classics, by Chef Brady Duhame, and interiors by the legendary Carlton Varney.
CEO of the iconic Dorothy Draper and Co., Carleton Varney's designs take all the hallmarks of Draper's historic work, with its scrolling cartouches and blooming "Princess Grace" rose motif and magnifies them to grandiose proportions. "Today's generation yearns to encounter glamour because they haven't experienced anything like it," says Varney of his inspiration in UNION PRIME'S exquisite décor. Set within the impressive architecture created by Scott Bromley, of Bromley-Caldari Architects PC, UNION PRIME evokes a chic sensuality in a glorious and fashionable backdrop.
The talented Chef Duhame studied at the prestigious Culinary Institute of America and mastered his skills at Bouley, Picholine, and Park Avenue Café. Modern creations of classic American steakhouse fare are merged with New York City's stylish sushi, sashimi, and raw marinated seafood. Hand-selected dry-aged U.S.D.A beef is shipped from local suppliers and includes a center-cut New York Strip, barrel-cut Filet Mignon, bone-in Cowboy Ribeye and a well-marbled Porterhouse for Two. UNION PRIME's signature, the Union Ten, is a hand-carved beef tenderloin, served traditionally, with a tower of sautéed spinach and whipped potatoes. Torched Rare Salmon with ginger mirin and cured pomelo makes for a uniquely refreshing starter. For seafood, the Pan Seared Jumbo Diver Sea Scallops, with roasted apple cauliflower puree and late harvest wild mushrooms is a complex delight. Simpler fare is offered like the Union Burger, with cheddar, applewood smoked bacon and roasted mushroom; and can be complimented with a side of crispy House-made Tatar Tots.
